Colombian Coffee / Café Colombiano

I can’t publish my recipes   without  honoring one page to the beverage that wakes me up every day, and from which we Colombians, are so proud of. The  recognition of   Colombian Coffee is known all over the world, and it wouldn’t be possible without the careful compromise of all who  harvest it . It’s special flavor starts from the moment one decides  which coffee will be picked, depending on it's supply and demand .

Definitively for me, finding millions of Colombian  Coffee bags produced and sold around the world, makes me feel  extremely  proud and reminded of  my great  Colombian roots. That's what  drives  me to ask for a   cup of   Colombian Coffee  any where I go. Coming to think of it, an invitation for a cup of coffee has been the beginning of many great negotiations and beautiful love stories. Therefore,  I  decided  to offer you  a few coffee recipes on the weeks to come. Don't miss them , subscribe to my blog !

*   *   *   *   *   *   *   *   *   *   *   *

3 huevos

Thanks for your emails and support !! / Gracias por sus mensajes y apoyo!!

Yes I know you are eager to try new recipes from me,  and that’s what I will do. I promise. I just have so many things in my plate these days that I have to go little by little. The reality is that just the fact of committing with you all to give you a new recipe once a week is already  a very big deal for me. This blog has been in my mind for many ( and I mean many ) years, but I hadn’t started it because I wasn’t sure I was going to be able to commit  once a week with you all. A month a go I decided to go for it and here I am writing away for a little while. Recipes ?? Please. I have more than I can handle. Books and tips come out of my ears every day,  and trying new recipes is my biggest hobby. However, all new recipes end up being changed by the time I finish eating  them and yes, I make notes of what I changed like I have told you to do so , but notes with scribbles that only I can understand. Finding the time to write neatly all my notes is near to impossible . As a matter of fact, I am willing to do it in this blog. That way I give you all the recipes and at the same time, will  have them neatly written for future use.

Any way, I will build up nice menus for you  to try . I  promise.  I will give you some appetizers, entrees and desserts and then you will be able to pick and  choose what you will cook . Feel free to mix and match my recipes as you please. However, if you have a specific theme in mind ( Mexican or Italian for example ) I recommend you serve a menu that combines good with all recipes and not separate dishes that don’t work together. If you need more advice on this please let me know.

*   *   *   *   *   *   *   *   *   *   *   *   *   *

 ( Mejicano o Italiano tal vez).

      1 lb blue berries
       1 cup of water
       2 egg whites
       1 cup sugar
   1½ cup heavy whipping cream

Rinse the berries and drain them.  Place them in  a pot with the one cup of water and bring them to a boil.  Take away from heat and let cool completely.  Mix in the blender and   for about one or two minutes at the most.  Strain it and take out the seeds. Set aside.  Separately, beat the egg whites for around five minutes. When you see that they are completely white and are forming peaks, add the sugar little by little. Don’t stop beating during this process.

Then, add the black berry concentrate and the heavy cream with a wooden spoon and mix till you see that all ingredients have incorporated.

Take to the freezer in one big bowl or in separate individual portion ones. Let freeze completely . I recommend making it one day in advance.

Enjoy !

Wine Wisdom / Sabiduria sobre vinos

-Fill Wineglasses 1/3 full to allow for swirling and smelling

-Red Wine Should be served at room
temperature (usually 60 F)

- White Wine Should be served at 48 F . It will warm very quickly so in many cases it's better to serve cooler than that to assure cool enough temperature for it.

- Decanting means pouring wine into  a glass decanter. This is done for two reasons. One, to let the wine breathe, which helps develop the flavor of red wines, and also, to distill sediment from aged wines.

                          *   *   *   *   *   *   *   *   *   *

-Vinos Rojos deben servirse a temperatura
ambiente(usualmente 60 grados F)

4 portions

5 garlic cloves finely chopped
1 medium white onion finely chopped
1 red pepper chopped in small cubes
2 large ripe tomatoes chopped in cubes
4 tbs olive oil
3 sticks of celery chopped
¼ cup white wine
Salt and Pepper
¼ lb calamari
¼ lb medium shrimp
¼ lb big shrimp
½ lb fish cut in big chunks ( it can be Sea Bass, Tilapia or any fish with no thorns)
 ¼ lb clams
3 potatoes cut in cubes
Cilantro leaves chopped  ( About 1/2  cup , optional)
3 cubes of fish broth ( you can also use 3 cups of liquid  fish broth – in this case, don’t add 4 cups of water at the end. Add only one)

Clean all seafood . In boiling water cook the clams in medium heat for 20 minutes. When time is up, take them out. Keep the water for later.

Separately cook the oil with the onions till they  look translucent. At that point you can add the garlic. They shouldn’t be cooked together form the beginning because the garlic tends to burn easily. If you incorporate it later, that doesn’t happen. Then add pepper , tomatoes and celelry. Cook for a few minutes. ( Till you see all the juices coming out) . Add the seafood  and potatoes and cook for about 5 minutes moving everything around.

Add 4 cups of water, one by one checking thickness of the soup. ( You can use the water you have from the clams at this point) and the fish cubes ( or fish broth. Remember, if you choose to use fish broth, don’t add 4 cups of water. Add only 1 ). Cook for 45 minutes at medium heat covering the pot and moving around once in a while. You can add some chopped cilantro at this point. Add the wine and check the flavors. Keep in mind the fish cubes include salt. Before you add anymore check the flavors to taste. If you need to add more water for consistency, feel free to do so.

Serve very hot and decorate with cilantro.

*   *   *   *   *   *   *   *   *   *   *

4 porciones

5 dientes de ajo finamente picados
1 cebolla cabezona mediana blanca finamente picada

Some Basics / Algo basico

1.Always read the whole recipe to make sure you have all the ingredients and you understand the instructions.

2. The first time you cook a recipe, you MUST do it exactly how you read it. If you feel it was missing something, or you want to add your personal touch, make a note of it, so next time you know exactly what to do.

3. I don't recommend changes in any of your baking’s, like cakes , cookies and breads,  unless you are an expert. Baking can be a challenge for one who doesn't   have much experience.

               *   *   *   *   *   *   *   *   *

First day of School/ Primer día de Colegio

Here I am again , alone, in the dark, in the middle of  the night. Everyone sleeps in this house but me and my computer. A  dark kitchen with only  the light of this electronic device  that ends up  working like a magnet in my life sometimes. Tomorrow is the first day of school once again.   On one side of this table I can see two backpacks , zipped and ready. Inside of them   plenty of new white paper, new erasers and gorgeous new yellow pencils begging for  someone to  use them and register school work . Nice and new  clothes with matching  shoes are  right by the side of both  my kids beds. My gorgeous daughter starts high school tomorrow and   my boy has  just another middle schools year ahead of him. When did all this time go by ?  I still remember my tears  the first time I sent them on their  bus  to school . I barely could see   their tiny hands waiving to me. Probably  writing   away on this virtual world , I will  give my life  a pause somehow, now that I realize time moves faster than light.

I am not sure if they will remember tomorrow, or many of the other days we’ve spent together so far. Probably my daughter will, just because it's her first day of high school, but in general ,  I only remember  a handful of stories from before middle school and that’s probably what will happen to my kids . I guess for now I should just prepare for them a nice warm lunch  in this kitchen of mine,  and make sure the smell travels with them this whole first day  of school……………….
 Kids Menus also on the way starting in September !

*   *   *   *   *   *   *   *   *   *   *   *   *   *   *   *   *

Basic Wines/ Vinos Basicos

It’s fascinating  to see how  wine consumption has increased in the past twenty years. That’s why  I want to give you a few basic  recommendations before I start publishing my recipes.

White Wines – Ideal with soups, consommés, fish, all seafood and fresh cheeses. In general soups are better without wine but the thicker ones can be combined with  a sparkling one. Soups served as an entrée should be combined with Chianti.

Pink Wines ( Rosé) – go well with poultry, pasta, goat cheese and semi-soft cheeses.

Red Wines- Ideal with beef and spicy foods. Never with  soft cheeses  or dishes with Bernese  sauce.

Sweet wines- Ideal with fruit and desserts.

Stay tuned for more wine recommendations !!
First Menu  coming Sunday  Sept 4th. Don’t miss out !!

*   *   *   *   *   *   *   *   *   *   *   *   *   *   *

Other Senses / Otros Sentidos

I don’t want  to leave out  other senses which are equally important when it’s time to eat .  I don’t think we could say that a plate smells delicious if the minute you look at it  , it’s  presence is simply unacceptable. The smell, the flavor, the color , and in many occasions the sound, will create for  you  the  real experience of  a winner dish ! The sound ??  Sure. We must  emphasize the sound of a  good puffed pastry . It’s crackle is  as the one from  autumn leaves , when walking  on  top of them   across your favorite park. Or the sound  of  beef on the grill, which generally is the one  confirming  it’s perfection.

I am the first one to admit that when trying new recipes, it’s presentation is somewhat of a challenge. That’s why  I want to recommend trying new flavors with your family, before you serve them  on the next  promotion  dinner  with  your boss, or the elegant invite  for your new in laws. I am hearing your giggles now that you read me, but even if it sounds  ridiculous, you must try new recipes on your own to make sure you  find your preferences and create of   your  food a winner dish. Recipes coming soon !

*   *   *   *   *   *   *   *   *   *   *   *   *   *

The senses / Los sentidos

Haven’t you realized that smell is the most important sense  when it comes to food ?  Most of what you taste comes from what you smell first !  That’s why  you can’t taste anything when you have a cold. For my part, I am not only convinced that  without the cooperation of smell there can be no complete degustation, but I am also tempted to believe that smell and taste are in fact a single sense, whose laboratory is the mouth and whose chimney is the nose. Don’t you think this sounds  very real ?

Smell can also induce emotions , feelings of nostalgia and involuntary memories. You’ve probably experienced this  when a smell triggers a childhood taste and a wave of emotion hits you in the gut.

Identifying odors and tastes is elusive, and writing about it is just as difficult. I will tell you today that I will do my best to try to give you somewhat of an idea of what I want to express, and what I want you to taste. I know in many cases, many of us cooks try to describe a specific smell using an analogy where something is “like” something else. But it’s tricky.  I could say  “ Basil tastes like Mint” but  what if you have never tasted mint ??  So the reality here in my blog is that  you will find recipes, ideas and tips but the real flavors will be experienced only by you when  your cooking time begins !  I will do my best to try  to describe smells and flavors,  hypnotizing your way to the kitchen and helping you create easy and marvelous recipes.I wish you my best !    Wait for my first recipes in the next few weeks.

Mucha suerte ! Espera mis primeras recetas en proximas semanas.
